Chives are a perennial herb botanically classified as Allium schoenoprasum, and they are the smallest growing species in the onion family, alongside garlic, onions, scallions, shallots, and leeks. They are also known as Common Chives or Onion Chives to differentiate them from Chinese chives, also called garlic chives, which are longer, broader, and flatter, and offer a more pronounced garlic flavor. Common Chives are known as one of the four Fines Herbes, a classic French herb blend that also contains tarragon, chervil, and parsley. Chives are often confused with green onions or scallions, but they can be distinguished by their thin and hollow leaves, solid green color, and lack of a white bulb at the end of their stems.
